chore: add wails.json, remove wails3 artifacts, rebuild binaries

- Add wails.json for Wails v2 build
- Remove wails3 boilerplate (build/Taskfile.yml, build/config.yml, etc.)
- Add server-data/ to .gitignore
- Rebuild frontend-dist and GUI binary
